Summer Gazpacho

 
                    

 VIRGIN BLOODY MARY GAZPACHO
 
32 ounces of your favorite homemade Bloody Mary Mix or use Snappy Tom
 
2 medium yellow tomatoes - finely diced
 
2 medium red tomatoes - finely diced
 
1/2 English cucumber - finely diced
 
2 shallots - finely diced
 
3 garlic cloves - peeled & finely diced
 
3 stalks of celery - finely diced
 
3 green onions - finely diced
 
Juice of 1 lemon
 
1/2 red bell pepper - finely diced
 
1/2 jalapeno pepper - finely diced
 
Pour Bloody Mary Mix into a non-corrosive bowl.  Add the rest of the ingredients stirring to combine.  Cover and place in refrigerator overnight. 
 
Serve in soup bowls.
 
Serves 6.
